How do I pick the right plug number?

Go by the size in the part name, not the plug number. Pipe means the plug drops inside a cut or open pipe of that size, and fitting means it seats inside a threaded or socket fitting of that size. Measure the opening first, since a 1 1/2 inch fitting and a 1 1/2 inch pipe do not take the same plug.

Do I need a plug with a blow thru valve?

You need one if you want to blow the line out with the plug already installed. The valve lets compressed air pass through and then closes when the air stops, so the line holds its air lock and water cannot flow back. Plugs without a valve are set after the line is already clear.

Will a winter plug stop freeze damage by itself?

No. The plug keeps water out of a line you have already cleared, so blow the lines down and drop the water below the returns first, then plug. Snug the wing nut by hand until the rubber grips, and back it off in spring rather than fighting a plug that has been cranked tight all winter.
