What does a skimmer compensator actually do?

It stands in the skimmer and gives freezing water something soft to push against. Water expands as it turns to ice, and if the only thing in the skimmer is water and concrete or molded plastic, the wall is what gives. A compensator absorbs that expansion so the skimmer survives the winter intact.

What is a blowout valve plug for?

It lets you install the plug first and clear the line second. Compressed air passes through the valve, pushes the water out, and the valve closes when the air stops, so the line keeps its air lock and water does not run back in. It saves the scramble of trying to seat a plug while a line is still blowing.

Do I still need the rest of the winterizing kit?

Yes. Freeze protection is a system: lower the water, blow the lines, plug the returns, protect the skimmer, and cover the pool. A compensator or blowout plug covers one link in that chain, and the chain is only as strong as the piece you skipped.
